Description
What you'll learn in this winter cooking class:
Chef Paul has brainstormed this menu of great sauce-based dishes, perfect for a winter weekend meal. Sauces can be intimidating, but they are so versatile and handy, and easy to make ahead of time. You will learn how to make a different sauce with each dish on this menu, which features a warm vegetable dish, roast chicken, and pasta. Even the dessert has a sauce!
Learn to cook the following:
- Warm escarole salad with a creamy buttermilk dressing
- Roast chicken with a braised tomato, rosemary, and kale sauce
- Pasta with a roasted pepper, almond, and tomato sauce
- Raspberry sorbet with fruit coulis
Students below 18 years old should be accompanied by a parent/guardian.

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
