What you'll learn in this basic cooking class:

This class will offers you a valuable set of culinary techniques to move you along in your kitchen education. The is a menu variation on our original Six Basic Cooking Techniques class.

  • Browning Meats (Pan-Roasted Chicken)
  • Making Flavorful Pan Sauces (Sherry-Thyme Gravy)
  • Roasting Vegetables (Roasted Butternut Squash Puree; Roasted Potatoes and Fennel)
  • Blanching Green Vegetables (Garlicky Broccoli Rabe)
  • Cooking Leafy Greens (Tuscan Kale with Almonds and Raisins)
COOKBOOK COMPANION: Because this is the best-selling class at the school, we have just published its cookbook companion. It expands on everything you'll learn, with 30 more recipes to practice your newly acquired knife, meat, sauce, and vegetable skills! If you want to take home the cookbook, you can add it to your class registration and collect your copy at the school. It also makes a fantastic gift for any novice cook. 
School Notes:
You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to share at the sit-down meal.

Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden worktable that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.

We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spacial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.

We have a firm 48-hour cancellation policy to ensure that we have enough time to re-fill your seat with another student. For cancellations prior to the 48-hour mark, we are happy to offer credit for a future class.

While it is not in our nature to say no, we are not able to offer credit for last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand these things do happen.

Great class with an excellent teacher who provided easy-to-follow tips for duplicating the recipe at home. And the meal was delicious!

Appreciate that the class was hands on but not in the same way as other classes I have attended. We chopped vegetables and took turns stirring a bowl of mashed potatoes/chocolate, etc - but in other classes I have attended we are paired with 2-4 and working around a workstation.
